The Chef

Chef Dimitri de Koninck, a master of his craft, combines classic culinary traditions with a bold, contemporary vision. Think of his signature dish with bluefin tuna, akami, shiso, chutoro and ponzu. Or another favourite dish of our guests based on hamachi, samba, green meat, verveine and myoga. Full of contrasts, yet incredibly harmonious.

Product follows season

Each dish is a conscious creation, based above all on respect for the product and a pursuit of perfection. Chef Dimitri de Koninck follows the seasons, using the best quality ingredients available, as an invitation to expand the boundaries of your culinary horizons.
